One Pot 20 Minute Greek Pasta

It's a one pot wonder, this Mediterranean inspired pasta is ready in just 20 minutes!

Ingredients

  • 12 oz whole wheat pasta
  • 6 oz black olives, sliced drained
  • 13.5 oz can quartered artichokes drained
  • 2 large roma tomatoes, diced
  • 1 14 oz can diced tomatoes drained
  • 2 teaspoons kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon fresh parsley + to garnish
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 4 1/2 cups water
  • 1 1/2 - 2 cups feta cheese seasoned or unseasoned

Instructions

  1. Add all ingredients, except feta cheese, to a large (at least 5 quart) pot and bring to a boil.
  2. Once boiling, stir often with tongs to prevent pasta from sticking until pasta is cooked al dente and most of the liquid is gone. About 8-9 minutes.
  3. Remove from heat and then add feta cheese and garnish with a litlte more parsley and serve!

Notes

  • You can sub regular spaghetti or linguine.  
  • Sub or add your other favorite veggies!
