One Pot Buffalo Chicken Cheesy Tortellini

Ingredients

  • 1 tbsp butter
  • 1 lb chicken breasts cut into 1 inch pieces
  • 1 cup buffalo sauce divided
  • 20 oz refrigerated cheese tortellini
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp kosher salt
  • 2 cups chicken broth
  • 2 oz cream cheese cubed
  • ½ cup cheddar cheese shredded

Instructions

  1. Add the butter to a large skillet over medium heat.
  2. Toss the cubed chicken with ½ cup buffalo sauce.
  3. Once the butter is melted, add the chicken to the skillet.
  4. Cook 4-5 minutes, then add the tortellini to the skillet with the paprika, garlic powder and salt.
  5. Pour the remaining ½ cup buffalo sauce and chicken broth into the skillet and bring to a boil.
  6. Cover, reduce heat and simmer 7-8 minutes.
  7. Remove the lid and add the cream cheese and cheddar cheese.
  8. Stir to combine, and allow the cheese to melt in for 3-4 minutes.
