One Pot Chicken and Orzo

Ingredients

  • 1-2 tablespoon olive oil
  • 4-5 chicken breast
  • 2 tsp garlic powder
  • 1 tsp oregano
  • salt and pepper to taste
  • ½ Jar sun-dried tomatoes
  • 1 box orzo
  • 1 quart chicken broth
  • 1 package Borsin Cheese
  • 1-2 cup fresh spinach
  • ¼ cup Fresh grated Parmesan Cheese (optional)

Instructions

  1. Cut up chicken breast into roughly 1 inch pieces. Make sure they are all about the same size so that they cook evenly.
  2. In your Dutch oven, add 1-2 tablespoon Olive Oil, and turn the burner on to medium heat.
  3. When the oil is hot, add your chicken, garlic powder, oregano, and salt and pepper.
  4. Cook for 5 minutes, and add sun-dried tomatoes.
  5. Continue to cook until the chicken is mostly cooked.
  6. Add Orzo and mix to allow the orzo to toast for 1-2 minutes.
  7. Add quart of Chicken broth and stir.
  8. Let this simmer for 10-15 minutes, until the orzo is fully cooked and absorbs most of the liquid.
  9. Once the orzo is fully cooked add the Borsin and fresh spinach. Mix until the cheese is fully incorporated, and the spinach is wilted.
  10. Taste for seasonings and add more if needed. Serve with fresh grated parmesan on top!

Notes

  • Toast the orzo - Briefly toast the dry orzo pasta in the pot before adding liquid. This prevents it from becoming mushy and adds a nutty flavor dimension.
  • Use chicken thighs if possible - They're more forgiving than breasts and add more flavor and moisture to the dish.
  • Don't rush the liquid absorption - Maintain a gentle simmer and allow the orzo to gradually absorb the broth for a creamy consistency without becoming gluey.
  • Rest before serving - Let the dish sit covered for 5 minutes off the heat before serving to allow flavors to meld and excess liquid to be absorbed.
  • Season in layers - Add salt and pepper at multiple stages rather than all at once at the end.
