One Pot Chicken Fajita Pasta

In one pot and only 29 minutes, prepare a delicious chicken fajita pasta dish that will easily become a weeknight family favorite!

Ingredients

  • 2 tbsp olive oil
  • 2 cups bell pepper small dice
  • 1 cup red onion small dice
  • 2 cloves garlic minced
  • 1 lb ground chicken breast
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp sea salt
  • ¼ cup hot sauce
  • 14.5 oz can diced tomatoes with green chilies
  • 2 cups macaroni noodles uncooked
  • 1 ½ cups chicken broth
  • 1 cup pepper jack cheese shredded

Instructions

  1. Add the olive oil to a large pot or dutch oven over medium high heat.
  2. Add the bell pepper, onion, garlic and chicken, cook 3-4 minutes, or until chicken is cooked through.
  3. Add the cumin, chili powder, paprika, sea salt, hot sauce and can of diced tomatoes with green chilies, stir to combine.
  4. Add the macaroni noodles and chicken broth to the pot.
  5. Cover, reduce heat to low and simmer 15 minutes.
  6. Open and stir, cover and cook for an additional 5 minutes.
  7. Remove the lid and add the pepper jack cheese.
  8. Stir to combine and serve.
