One Pot Chicken Fajita Pasta

In one pot and only 29 minutes, prepare a delicious chicken fajita pasta dish that will easily become a weeknight family favorite!

Ingredients
- 2 tbsp olive oil
- 2 cups bell pepper small dice
- 1 cup red onion small dice
- 2 cloves garlic minced
- 1 lb ground chicken breast
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp sea salt
- ¼ cup hot sauce
- 14.5 oz can diced tomatoes with green chilies
- 2 cups macaroni noodles uncooked
- 1 ½ cups chicken broth
- 1 cup pepper jack cheese shredded
Instructions
- Add the olive oil to a large pot or dutch oven over medium high heat.
- Add the bell pepper, onion, garlic and chicken, cook 3-4 minutes, or until chicken is cooked through.
- Add the cumin, chili powder, paprika, sea salt, hot sauce and can of diced tomatoes with green chilies, stir to combine.
- Add the macaroni noodles and chicken broth to the pot.
- Cover, reduce heat to low and simmer 15 minutes.
- Open and stir, cover and cook for an additional 5 minutes.
- Remove the lid and add the pepper jack cheese.
- Stir to combine and serve.
