One-Pot Chicken Spaghetti

One-Pot Chicken Spaghetti is a super easy pasta dinner all made in one pan! Chicken, chicken broth, Rotel tomatoes, cream cheese, and a few spices make this tasty dish.

Ingredients

  • 12 12 ounces spaghetti, broken in half
  • 4 4 cups chicken broth
  • 1/2 1/2 teaspoon salt
  • 1/4 1/4 teaspoon garlic powder
  • 1/4 1/4 teaspoon onion powder
  • 2 2 cups rotisserie chicken
  • 1 1 (10 ounce) can Rotel tomatoes, undrained
  • 4 4 ounces cream cheese, softened
  • 1 1 cup shredded Mexican cheese
  • optional: chopped cilantro or parsley for garnish

  1. In a large pot or Dutch oven, add the spaghetti, chicken broth, salt, garlic powder, onion powder, and bring to a boil. Reduce heat to medium and cook 12-15 minutes or until al dente. Most of the liquid will be gone.
  2. Add the chicken, Rotel tomatoes, cream cheese, and Mexican cheese. Stir well. Add salt and pepper to taste. Garnish with cilantro or parsley if desired. Serve immediately.
