One-Pot Greek Chicken and Peas: Kotopoulo me Araka

Ingredients

  • 4 chicken drumsticks
  • ¼ cup olive oil
  • 1 onion chopped
  • ¼ cup white wine
  • 1 cup hot water or broth
  • 16 ounces crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 pound uncooked peas
  • 3 tablespoons chopped dill
  • salt/pepper as needed
  • 1 bay leaf

Instructions

  1. Heat the olive oil at moderate heat in large pot.
  2. Sauté the onions for about 2 minutes.
  3. Add the drumsticks and brown the chicken turning for about 3-4 minutes.
  4. Add the wine and stir and scrape any pieces stuck to the pot.
  5. Add the tomatoes, water, tomato paste, salt and pepper and simmer for 20 minutes, at this point you will add the peas.
  6. Add the peas, dill and the bay leaf and continue simmering for another 15 minutes.
  7. The dish is ready when there is no water left in the pan just the sauce.
