One Pot Meatball Stroganoff

This easy meatball stroganoff recipe with a creamy, savory onion and mushroom sauce is comfort food at its best.

Ingredients

  • ¼ cup butter
  • 1 onion, chopped
  • 3 cups mushrooms, sliced
  • 2 tablespoons garlic
  • ½ teaspoon salt
  • 1 teaspoon pepper
  • 3 cups beef broth
  • 4 cups uncooked wide egg noodles
  • 30 beef meatballs fully cooked, frozen
  • ⅔ cup sour cream
  • 1 tablespoon paprika
  • 1 tablespoon thyme

Instructions

  1. In a large saucepan, melt butter over medium to medium-high heat.
  2. Add mushrooms, onions, garlic, salt and pepper and cook for 4 minutes or tender.  Stir frequently.  
  3. Add beef broth, meatballs, paprika, thyme and egg noodles.  Cover and bring to a boil.  Reduce temperature and simmer for 10 minutes.  
  4. Remove from heat and let stand 5 minutes.  
  5. Stir in sour cream and serve immediately. Enjoy!

Notes
