One Pot Meatball Stroganoff

This easy meatball stroganoff recipe with a creamy, savory onion and mushroom sauce is comfort food at its best.

Ingredients
- ¼ cup butter
- 1 onion, chopped
- 3 cups mushrooms, sliced
- 2 tablespoons garlic
- ½ teaspoon salt
- 1 teaspoon pepper
- 3 cups beef broth
- 4 cups uncooked wide egg noodles
- 30 beef meatballs fully cooked, frozen
- ⅔ cup sour cream
- 1 tablespoon paprika
- 1 tablespoon thyme

Instructions
- In a large saucepan, melt butter over medium to medium-high heat.
- Add mushrooms, onions, garlic, salt and pepper and cook for 4 minutes or tender. Stir frequently.
- Add beef broth, meatballs, paprika, thyme and egg noodles. Cover and bring to a boil. Reduce temperature and simmer for 10 minutes.
- Remove from heat and let stand 5 minutes.
- Stir in sour cream and serve immediately. Enjoy!
