Ingredients

  • 1 tbsp olive oil
  • 1 cup zucchini diced
  • 4 cloves garlic minced
  • 2 cups Italian sausage casing removed – sliced or crumbled into large pieces
  • 9 oz fresh refrigerated cheese raviolis
  • 2 cups vegetable broth
  • 1 tbsp dried oregano
  • ¾ cup sun dried tomato pesto click link for homemade recipe
  • 2 oz cream cheese cubed
  • ¼ cup Parmesan Cheese
  • ¼ cup sun dried tomatoes

Instructions

  1. Heat the olive oil in a large skillet over medium high heat.
  2. Add the zucchini and garlic, saute for 1-2 minutes.
  3. Add the sausage and cook 3-4 minutes.
  4. Add the ravioli, vegetable broth and oregano, stir to combine and bring to a simmer.
  5. Cover and reduce heat to low, cook 7-8 minutes.
  6. Add the sundried tomato pesto, cream cheese and parmesan cheese, stir until the cheese melts into the dish, allow to cook on low for another 3-4 minutes.
  7. Remove from the heat and top with the sun dried tomatoes.
