Ingredients

  • 4 to 5 sausage I used herbed chicken sausage made fresh at the meat counter at my local grocer, casings removed, herbed, of your choice
  • 1 cup pea either 1 cup frozen or 1 cup fresh from approx. 1 pound of pea pods
  • 1 asparagus trimmed, and sliced into 1/2" pieces, bunch
  • 1 tsp olive oil
  • 5 garlic cloves
  • 3 scallions green onions, thinly sliced
  • 2 leek white and light green part only, trimmed and thinly sliced
  • 1 shallot I used a white shallot, but the purple ones work fine too, medium
  • 1 tsp crushed red pepper
  • 1 pound spaghetti noodles broken in half
  • 4 cups chicken broth reduced sodium
  • 1 cup heavy cream
  • 1/2 tsp kosher salt plus more for seasoning
  • 2 tbsp chives chopped
  • 1/4 Parmigiano-Reggiano cheese plus more for serving, freshly grated
