One Pot 15 minute Tex-Mex Rice for a #WeekdayWin

Ingredients
- 1 1/3 cup Minute Brown Rice
- 1 lbs 554 grams extra-lean ground beef
- 1 x 330 mL/13 oz black beans drained and rinsed
- 1 cup corn fresh, canned or frozen
- 2 tbsp taco seasoning*
- 1 cup chopped fresh tomatoes
- Optional Garnishes: chopped fresh cilantro leaves red bell pepper slices, avocado slices, sour cream or plain Greek yogurt
Notes
- * Taco Seasoning - if you don't have any taco seasoning mixture here's my version that's easy to whip up: 1 tbsp chilli powder, 1 tsp cumin, 1 tsp paprika (I use hot, but sweet will work as well), 1 tsp Kosher salt, 1/2 tsp garlic powder, and 1/2 tsp dried oregano
- ** Dish keeps well in fridge, making any leftovers an excellent lunch.
