Onion Boil

Cooked whole onion and baked in the oven with butter, smoked paprika, cajun seasoning, salt, garlic, and cheese.

Ingredients

  • 4 medium sweet onions washed, peeled, and ends trimmed off
  • 4 tablespoons butter or oil
  • 4 ounces gruyere or swiss cheese about 1.5 inches each
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon Cajun Seasoning
  • 1 tablespoon smoked paprika
  • 1 teaspoon kosher salt
  • 4 garlic cloves peeled
  • finely chopped parsley Optional

Instructions

  1. Preheat the oven to 375 F.
  2. Prepare the 4 medium sweet onionsWash, then peel and cut both ends off and discard. Using a melon baller, scoop out some of the inside of the onions to create a space for the fillings in the center.
  3. In a small bowl, combine the 2 tablespoons extra virgin olive oil and seasonings. (1 tablespoon cajun seasoning, 1 tablespoon smoked paprika, 1 teaspoon kosher salt)
  4. Stuff each onion with the 4 tablespoons butter and 4 ounces Gruyere or Swiss cheese. A cube of butter and a cube of cheese in each.
  5. Cut four squares of aluminum foil and place the onions in the middle of each.
  6. Drizzle with the seasoned oil and top with the 4 garlic cloves (1 in each). Wrap the aluminum foil all over the onions and place them in a baking dish.
  7. Bake for 45-55 minutes, or until fork tender.
  8. Garnish with finely chopped parsley. Serve with cooked rice, boiled eggs, or roast.

Notes

  • Use sweet onions 
  • The size of the onions won't matter. I like to use medium onions If you love onions, you can use large onions. 
  • Use any of your favorite seasonings you have on hand. You can get creative and use whatever seasonings you prefer.
  • I liked adding a bit of cheese to my onion boil, it reminds me of French onion soup. The cheese is optional.
  • You can serve onion boil as a side dish with protein.
