Ingredients

  • 1 box yellow cake mix
  • ½ cup vegetable oil
  • 1 orange juiced (alternatively ½ cup orange juice)
  • 2 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoon baking powder
  • 3 eggs
  • 3.5 ounces vanilla pudding mix 3.5 oz vanilla or 1 oz fat free version
  • ½ cup 2% milk
  • cooking spray
Orange Glaze
  • 1 cup confectioners sugar
  • 2 tablespoon orange juice
  • 1 ½ teaspoon vanilla extract
  • 4 oz cream cheese softened

Instructions

  1. Preheat the oven 350*
  2. Combine the yellow cake mix, vanilla pudding powder, and baking powder in a large mixing bowl. Add orange juice, eggs, 1 teaspoon vanilla extract, orange zest, and milk to the bowl and whisk until smooth.
  3. Thoroughly coat bundt pan with cooking spray and flour to prevent the cake from sticking. Tap to remove excess flour and make sure entire inside of pan is coated.
  4. Pour batter into the bundt pan. Place into the oven and bake uncovered for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  5. Prepare the orange glaze. Whisk together confectioners sugar, orange juice, vanilla extract, and cream cheese. Set aside
  6. Remove from the oven and allow to cool for 10 minutes on a wire rack. Very carefully turn the cake out of the bundt pan and onto a serving platter. **Place the platter face down on top of the bundt pan, hold in place and flip over to remove**
  7. Pour orange glaze over the cake. Top with orange zest and enjoy!
