Ingredients

  • 1 3 ounce package orange flavored gelatin
  • 1 ½ cups boiling water
  • 1 3.4-ounce package instant vanilla pudding
  • 3 cups miniature marshmallows
  • 1 8 ounce tub whipped topping, thawed
  • 2 15 ounce cans mandarin oranges, drained well and patted dry

  1. In a large bowl whisk together the orange gelatin with the boiling water, stirring until the sugars have completely dissolved.
  2. Refrigerate for 15 minutes or until the mixture is cool to the touch, but not yet set.
  3. Remove from the refrigerator and whisk in the vanilla pudding mixture until fully incorporated.
  4. Return to the fridge for an additional 15 minutes or until the mixture is thickened.
  5. Stir in the mini marshmallows until well coated.
  6. Carefully fold in the whipped topping and mandarin oranges, being sure to scrape the bottom of the bowl as you stir.
  7. Transfer to a preferred serving dish and serve chilled.

Notes

  • Refrigerating Properly. Make sure you refrigerate long enough between steps (be patient) so everything sets properly and you get the best creamy, fluffy result.
  • Fold Gently. Use a gentle motion when folding the whipped topping into the mixture to maintain the fluff's light and airy texture. Do not use a blender or over mix as the mixture will deflate and become dense.
  • Correctly Make the Gelatin. Use boiling water to dissolve the gelatin completely and be sure to measure properly.
  • Drain the Fruit. It's important to fully drain the mandarin oranges and pineapple to prevent a watery salad.
  • Let it Set. Allow your mixture to set in the refrigerator for an hour before serving. This step is crucial for the ingredients to meld together properly.
  • Less Sweet Flavor. If you find the salad too sweet, consider adding a small amount of plain yogurt or sour cream to mellow the flavor.
