Orange-Ginger Shrimp Skewers

Ingredients

  • ¼ cup orange juice about 1 orange, fresh
  • 1 tsp orange zest
  • 1 tbsp green onions finely diced
  • ½ tbsp ginger peeled & minced, fresh
  • ½ tbsp cilantro finely chopped, fresh
  • 1 tbsp rice vinegar regular not seasoned
  • 1 tbsp soy sauce
  • ½ tbsp canola oil
  • crushed red pepper flakes more if you want it spicy, dash
  • 1 lb Shrimp peeled & deveined
  • cooking spray

Instructions

  1. Make the marinade by combining the orange juice and zest, green onions, fresh ginger, cilantro, rice vinegar, soy sauce, vegetable oil, and crushed red pepper flakes in a large zip-lock bag.  Mix until well combined.  
  2. Add the shrimp to the zip lock bag and place it into the refrigerator for 30 minutes.
  3. Remove from the zip-lock bag and thread them on the skewer sticks (I did six shrimp per skewer on 10 skewers). 
  4. Cook the shrimp skewers by heating a grill pan coated in cooking spray over medium-high heat.  
  5. Cook the skewers for 2 minutes on each side or until done.  
  6. Serve immediately. Enjoy.
