Ingredients

  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup white sugar (organic for vegan-friendly)
  • ⅔ cup extra-virgin olive oil
  • ¼ cup orange juice
  • zest from one orange
  • 2 eggs large
  • ½ cup sour cream
  • powdered sugar for serving
  • Orange slices for serving

Instructions

  1. Preheat oven to 350 F, grease a 9” baking pan
  2. In a large bowl, sift together the flour, baking soda, baking powder and salt; set aside
  3. In a separate bowl, stir together the sugar, olive oil, orange juice and orange zest. Beat in the eggs until smooth
  4. Add the flour mixture and stir.
  5. Then stir in the sour cream
  6. Mix well until you get a creamy and smooth batter.
  7. Transfer cake batter to the prepared pan.
  8. Bake in preheated oven 25-30 minutes, until toothpick in the center comes out clean
  9. Allow to cool before transferring to a rack to cool completely
  10. Serve with a dusting of powdered sugar and some fresh orange slices
