Ingredients
Dough:
- 4 1/2 - 5 cups all-purpose flour
- 1/2 cup sugar
- 2 envelopes Fleischmann’s® RapidRise™ Yeast
- 1 teaspoon salt
- 3/4 cup milk
- 1/2 cup water
- 1/2 cup butter cut into 1-inch pieces
- 2 eggs
- 1 tablespoon freshly grated orange zest
Glaze:
- 3 cups powdered sugar
- 3 tablespoons orange juice
- 3-4 tablespoons milk
Decorations:
- Various decorations such as pretzel sticks, chocolate chips, chocolate cookies, candy worms, etc.
Instructions
- Combine the flour, sugar, yeast and salt in the bowl of a stand mixer. Combine the milk, water and butter and heat until very warm (120º - 130ºF). Add the liquids to the flour mixture. Beat on medium speed for 2 minutes, scraping down the bowl occasionally. Add the eggs, orange zest and one more cup of flour. Beat on medium speed for 2 minutes. Continue to add flour, a few tablespoons at a time, until you have a stiff dough. Cover with plastic wrap and refrigerate for 2 to 24 hours.
- Remove the dough from the refrigerator and divide into 12 equally sized pieces. Divide each piece into 1 small, 1 medium and 1 large piece and roll into balls. Place the balls on a baking sheet lined with a silpat, parchment, or sprayed with nonstick cooking spray. Try to set the balls 2 inches apart. Cover with a clean kitchen towel and set in a warm place to rise until doubled in size, 35-45 minutes.
- Heat the oven to 375ºF. Bake the dough for about 15 minutes, until golden brown, rotating the pans halfway through. Remove and allow the rolls to cool completely.
- In a small bowl, combine the powdered sugar, orange juice and 3 tablespoons of the milk. Mix until smooth. Add more milk, if necessary, for a drizzling consistency.
- To make the snowmen, using a skewer or toothpicks, stack 3 of the balls, the largest on the bottom, medium in the middle and the smallest on the top. **If serving these to kids, make sure you remove the toothpicks or skewers before serving to young children.** Place on a piece of parchment paper and drizzle with the glaze. If necessary, use a small offset spatula to evenly coat the snowmen. While the glaze is still wet, decorate the snowmen with candy. Let the snowmen sit until set.
