Ottolenghi Air Fryer Asparagus with Butter, Almonds, Parsley and Lemon

Ingredients

  • 1 lb asparagus
  • cooking spray
  • salt and black pepper
  • 2 TB butter
  • ½ cup sliced almonds
  • ½ cup parsley chopped
  • ½ lemon sliced

  1. Preheat your air fryer to 400°F (200°C) for 5 minutes.
  2. Wash the asparagus spears thoroughly and trim off the tough ends. Pat them dry with a kitchen towel.
  3. Place the asparagus spears in a single layer in the air fryer basket. Lightly coat them with cooking spray and season with salt and black pepper.
  4. Cook the asparagus in the air fryer for 8-10 minutes, shaking the basket halfway through the cooking time for even browning. The asparagus should be tender but still slightly crisp.
  5. While the asparagus is cooking, melt the butter in a pan over medium heat. Add the sliced almonds and cook until they turn golden brown, stirring frequently to prevent burning, about 1-2 minutes. Remove from heat.
  6. Once the asparagus is done, transfer it to a serving platter. Drizzle the melted butter and almond mixture evenly over the asparagus.
  7. Sprinkle the chopped parsley over the asparagus, and garnish with lemon slices.
  8. Serve the air fryer asparagus immediately as a side dish or as a light appetizer.
