Our Favorite Bircher Muesli

This bircher muesli is our absolute favorite! Oats, nuts, dried fruit and coconut and mixed with yogurt, milk, vanilla, grated apple and more. Store overnight in the fridge then serve in the morning for the most satisfying breakfast!

Ingredients

  • 1 cup rolled oats
  • ⅓ cup Chopped Pecans
  • ⅓ cup dried cherries
  • ⅓ cup unsweetened flaked coconut
  • 3 tablespoons ground flaxseed
  • ½ teaspoon cinnamon
  • pinch of kosher salt
  • 1 apple, grated
  • ½ cup milk . (any variety works)
  • ½ cup yogurt, I like plain greek yogurt
  • 1 teaspoon lemon or orange juice
  • 1 teaspoon vanilla extract
  • toppings: fruit, nut butter, nuts, seeds, milk, cinnamon, anything crunchy

Instructions

  1. Stir together the oats, pecans, cherries, coconut, flax, cinnamon and a big pinch of salt. Stir in the grated apple. In a smaller bowl or measuring cup, whisk together the milk, yogurt, juice and vanilla. Stir the wet ingredients into the dry ingredients. Cover and place in the fridge overnight.
  2. In the morning, stir and top with your desired fruit, nuts, seeds, nut butter, jam, etc. Drizzle on a little extra milk if you wish. Enjoy!
