Oven Baked Fish with Tomatoes and Herbs
This oven baked fish with tomatoes and herbs is such an easy and flavorful recipe that can be made with salmon, cod or red snapper.
Ingredients
- 2 salmon firm fish fillets, or cod or red snapper
- 1 lime juiced
- 3 garlic minced, cloves
- ½ onion finely chopped, medium
- ½ cup parsley chopped
- ½ teaspoon rosemary dried
- ½ teaspoon thyme dried
- 1 teaspoon paprika sweet
- 1 cup tomato diced, fresh
Instructions
- Preheat oven to 375°F.
- In a medium bowl, mix the lime juice, garlic, parsley, onion, rosemary, thyme, paprika and tomatoes. Place the fillets in an unoiled baking dish and spread the topping over the fish.
- Cover tightly with foil and bake for about 25 minutes, until the fish flakes easily with a fork.
