Oven Baked Starbucks Egg Bites

These oven baked egg bites combine eggs, cottage cheese, bacon, and shredded Gruyere cheese in a smooth custard that is steamed in a water bath for a tender, creamy texture. They resemble the popular Starbucks version and can be prepared ahead and frozen.

Description

Oven Baked Starbucks Egg Bites are made by blending eggs, cottage cheese, and salt until smooth, then layering cooked bacon strips and shredded Gruyere cheese in a sprayed muffin tin. The mixture is poured on top and the tin is placed in a steam bath inside the oven to mimic a sous vide effect.

Baking at 350°F for 25 minutes with the steam bath helps the egg bites cook gently for a creamy, custard-like interior with bits of crispy bacon and melted cheese. After cooling, the bites can be removed from the tins easily.

These egg bites can be frozen for up to three months. When reheating, thawed bites can be warmed in a microwave wrapped in a wet paper towel or in an air fryer or oven. From frozen, microwave on reduced power or a combination of microwave and air fryer/oven heating helps maintain texture.

  • 9 egg large
  • 1 cottage cheese ½ cup
  • 1 tsp salt
  • 6 Bacon cooked, strips
  • 2/3 cup gruyere cheese shredded

Instructions

  1. Preheat oven to 350F and spray a 12 slot muffin tin with a spray oil. Add eggs, cottage cheese and salt to a blender. Blend until a smooth mixture remains.
  2. Add 1/2 strip of bacon cut in half again to each of the muffin slots. Add the cheese to the muffin pan on top of the bacon. Pour the egg and cottage cheese mixture into the muffin pan, filling each pan evenly.
  3. Carefully prepare the steam bath by placing a baking sheet on the bottom rack of the oven. Boil water on the stove top and carefully pour the boiling water onto the baking sheet. Place the muffin tin on the middle rack of the oven. ** Wear proper heat protective oven mitts while doing this
  4. Close the oven and bake for 25 minutes. Remove the muffin tin from the oven. Turn off the heat and allow the baking sheet to cool before removing it from the oven. 
  5. Allow the egg bites to cool slightly then remove from the muffin tin and enjoy!

Notes

  • Allow egg bites to cool completely before freezing in a freezer-safe bag; they keep up to three months.
  • Reheat thawed bites in microwave with a moist paper towel for 45 seconds or in air fryer/oven at 300°F until warmed through (5-15 minutes).
  • For frozen egg bites, microwave on 75% power for 3 minutes or use a combination of microwave and air fryer/oven to reheat evenly.
