These carrots and parsnips are oven roasted until crispy on the outside and tender on the inside. They are healthy, crazy simple to make, and full of rich, savory flavor.

Ingredients

  • 1 lb carrots sliced
  • 1 lb parsnips sliced
  • 3 tbsp olive oil
  • 1 tbsp salt adjust to taste
  • 1/2 tsp ground black pepper adjust to taste

  1. Preheat oven to 425°F. Clean veggies and cut them into equal size pieces.
  2. Place them in one layer on a baking sheet. Drizzle with oil, salt, and pepper.
