Ingredients

  • 2 small zucchini cut into half moons
  • 2 small yellow squash chopped
  • 8 ounces baby bella mushrooms
  • 1 red bell pepper diced
  • ½ red onion diced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

Instructions

  1. Preheat oven to 425°F.
  2. Pour the veggies into a large mixing bowl. Drizzle the olive oil over the tops.
  3. Sprinkle the smoked paprika, thyme, garlic powder, salt and ground black pepper over the top. Toss until well combined.
  4. Pour onto a baking sheet that’s been brushed with olive oil and spread in an even layer. Bake for 15-17 minutes or until the vegetables are cooked through.
