Ingredients
- 2 small zucchini cut into half moons
- 2 small yellow squash chopped
- 8 ounces baby bella mushrooms
- 1 red bell pepper diced
- ½ red onion diced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon ground black pepper

Instructions
- Preheat oven to 425°F.
- Pour the veggies into a large mixing bowl. Drizzle the olive oil over the tops.
- Sprinkle the smoked paprika, thyme, garlic powder, salt and ground black pepper over the top. Toss until well combined.
- Pour onto a baking sheet that’s been brushed with olive oil and spread in an even layer. Bake for 15-17 minutes or until the vegetables are cooked through.
