Overnight Mango Coconut Oats {Vegan, West African Flavours)
Description
This recipe soaks gluten-free oats overnight in coconut milk sweetened lightly with maple syrup. The slow soaking hydrates the oats, creating a creamy base carrying the fragrant coconut flavor. Mango puree is mixed in the next day, adding sweetness and a tropical fruit note.
Additional fresh sliced banana, berries, and a handful of nuts fold into the oats for contrasting textures and natural sweetness. The dish is served cold, making it refreshing and quick to prepare. The use of coconut milk and tropical fruits introduces West African-inspired flavors.
