Pachos with Emerald Isle Dipping Sauce Recipe

Pachos are a loaded fries dish featuring crispy waffle or curly fries topped with melted cheddar cheese and green onions, served alongside a tangy, sweet, and herby Emerald Isle dipping sauce made with Miracle Whip, mustard, vinegar, sugar, and dried herbs. The combination offers a balance of crispy, cheesy, and creamy elements with complementary bright and savory notes from the sauce.

Description

This recipe prepares pachos by baking seasoned waffle or curly fries until crisp, then layering them with shredded cheddar cheese and returning them to the oven briefly to melt the cheese. The piping hot fries with melted cheese form the base of the dish.

The Emerald Isle sauce combines Miracle Whip, yellow mustard, white vinegar, granulated sugar, dried basil, tarragon, black pepper, salt, and garlic powder. This mixture creates a creamy and tangy dip with subtle herbal flavor that contrasts the richness of the cheese and fries. The sauce is prepared separately and chilled until serving.

To serve, the cheesy fries are piled high with sliced green onions and accompanied by the chilled herbed sauce. This dish works well as a snack or casual appetizer with a distinctive sauce that pairs well with the crispy fries and sharp cheddar.
