Pajeori (Korean Green Onion Salad)

Ingredients

  • 3 large green onions or 5-6 smaller green onions
  • 1 tablespoon (15 milliliters) toasted sesame oil
  • 2 teaspoons (10 milliliters) unseasoned rice vinegar
  • 1 1/2 teaspoons (7 milliliters) soy sauce
  • 1 teaspoon granulated sugar
  • 1 1/2 teaspoons Korean Chili Salt or Gochugaru, Korean chili flakes, plus more for topping

  1. Shred or thinly slice the green onions into 3 inch (7.5 centimeter) long pieces.
  2. Place the shredded green onions in a large bowl of cold water and set aside for 10 minutes.
  3. In another bowl, whisk together the sesame oil, rice vinegar, soy sauce, and sugar until well combined and the sugar has dissolved. Add the chili salt.
  4. Drain the green onions and pat well with a towel to remove any excess moisture.
  5. Immediately before serving, toss with the sesame oil mixture.
  6. Serve immediately with a little more chili salt or gochugaru for garnish.
