Ingredients

Paleo Banana Bread:
  • 3 ripe bananas
  • 2 large eggs
  • 2 tsp pure vanilla extract
  • 2 Tbsp pure maple syrup
  • 2 cups finely ground almond flour
  • 5 Tbsp tapioca flour
  • 1 tsp baking powder
  • 1/4 tsp sea salt
  • 2 tsp ground cinnamon
Almond Butter Glaze:
  • 2 Tbsp unsweetened almond butter
  • 3 Tbsp coconut butter
  • 2 Tbsp pure maple syrup
  • 1 pinch ground cinnamon
  • 1 pinch sea salt

Instructions

Bake the Banana Bread:

  1. Preheat the oven to 350 degrees F and line a 9" x 5" loaf pan with parchment paper.
  2. Add all of the ingredients for the banana bread to a blender. Blend until completely smooth. Pour banana bread batter into the prepared loaf pan and use a spoon or spatula to spread the batter into an even layer.
  3. Bake for 50 to 55 minutes on the center rack of the preheated oven, until the edges of the bread are golden-brown. Turn off the oven and allow bread to sit in the still-warm oven another 10 minutes.
  4. Allow bread to rest 1 hour before tugging on the parchment paper to release it from the loaf pan.
  5. Drizzle banana bread with almond butter glaze, slice, and enjoy!
Make the Glaze:
  1. While the banana bread is baking, you can prepare the glaze. Add all ingredients for the glaze to a microwave-safe bowl and microwave 20 to 40 seconds, or until ingredients are melted. Stir until well-combined. Set aside until ready to use.
