Paleo Energy Balls with No Dates

One bite of these coconut brownie energy bites and you'll be hooked! They are the perfect before and after workout snack as well as mid-afternoon!

Ingredients

  • 1 cup raisins packed
  • 1 cup cashews
  • ¼ cup cocoa powder
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • Pinch cinnamon
  • ⅓ cup shredded coconut

Instructions

  1. Place raisins in a medium bowl and cover with hot water. Let soak for 5 minutes to soften then drain.
  2. Place the shredded coconut onto a plate and set it aside. 
  3. Add raisins and all remaining ingredients, except the shredded coconut, into a food processor and pulse until the mixture turns into the consistency of sand. Remove the blade from the unit.
  4. Using a spoon or your hands, scoop out the dough and roll it into a ball with the palms of your hands. 
  5. Roll each brownie bite over the shredded coconut and set onto a parchment-lined plate or in an airtight container. 
  6. Chill the bites for 30 minutes before enjoying. Refrigerate them in an airtight container for up to a week.
