Palm Heart Bacon Bites
Description
This recipe pairs halves of heart of palm with thick strips of naturally hickory smoked bacon, rolled together and secured with toothpicks. The bites are baked in the oven until the bacon is browned and crispy. The heart of palm inside retains a firm yet tender texture, providing a subtle freshness that balances the smoky richness of the bacon.
The seasoned bacon encasing yields a crispy bite after baking, while the heart of palm remains juicy and mild. Optional fresh thyme can be sprinkled for an aromatic touch. Accompanied by pesto or chimichurri — a South American parsley-based sauce — these bites achieve a pleasing blend of smoky, herbal, and tangy flavors.
They function well as finger food for casual gatherings or paired with beer or guaraná soda for an appealing snack. Alternative vegetables such as fingerling potatoes or baby carrots can be substituted for heart of palm to vary texture and flavor, although the distinct combination of heart of palm with bacon offers a unique contrast.
Ingredients
- 5 trips Bacon sliced in half, Farmland® Naturally Hickory Smoked Thick Cut
- 5 heart of palm sliced in half crosswise (i.e. cutting the long cylinder into two smaller cylinders
- thyme optional, fresh, to sprinkle
- ½ cup pesto sauce store-bought or homemade chimichurri sauce
Instructions
- Roll half strip of bacon over half heart of palm. Stick a toothpick all the way through to hold the bacon around the heart of palm. Place palm heart bacon bites onto a sheet pan lined with aluminum foil.
- Bake at 375 degrees F for about 20-25 minutes or until bacon is brown and crispy. Serve hot with pesto or chimichurri sauce on the side. Bacon bites can be accompanied by beer or guaraná soda.
Notes
- Hearts of palm may be substituted with fingerling potatoes, baby carrots, bite-sized celery stalks, asparagus, or pineapple for varied textures and flavors.
- Chimichurri sauce, used as a dip, typically consists of parsley-based South American pesto which complements the bites well.
