Pan Fried Roti Bread

Ingredients

  • 3 cups flour
  • 1 tsp baking powder
  • 1 tsp kosher salt
  • 2 tbsp olive oil plus more for cooking
  • 1 cup water

Instructions

  1. Combine the flour, baking powder and salt in a large bowl.
  2. Drizzle in the olive oil.
  3. Add the water until a solid ball forms. If too dry, add more water.
  4. Allow the dough to rest for 30 minutes then pull it apart into 8 small balls of dough.
  5. Roll each ball into a 6-8 inch disk.
  6. Brush olive oil on each side of the dough.
  7. Coat the bottom of a cast iron skillet with olive oil. Place the skillet on the stove over medium high heat.
  8. Add the bread and cook until the bread bubbles.
  9. Flip, then cook for 2 minutes on the other side.
  10. Repeat until all of the bread is cooked.
