Pan-Seared Cod

Ingredients

  • 4 6-ounce cod fillets
  • salt to taste
  • black pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 lemon cut into wedges, for serving
  • fresh parsley chopped, for garnish (optional)

Instructions

  1. Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
  2. Heat olive oil in a large nonstick skillet over medium heat until shimmering.
  3. Carefully add the cod fillets to the skillet and cook for 4-5 minutes on one side until golden brown.
  4. Flip the cod fillets, add butter to the skillet, and continue to cook for another 3-4 minutes or until the fish flakes easily with a fork.
  5. Remove from heat, squeeze fresh lemon juice over the fillets, and garnish with chopped parsley if desired.
