Pan Seared Salmon with Strawberry Avocado Salsa

Ingredients

  • 1 tbsp vegetable oil
  • 4 6 oz salmon fillets skinless
  • 8 strawberries hulled and quarters
  • 1 avocado diced
  • salt and pepper to taste
  • juice 1/2 lime

Instructions

  1. Heat vegetable oil in a non-stick pan over medium high heat. Dry the salmon fillets with paper towel then season generously with salt and pepper on both sides. Place with 'skin' side down for 3-4 minutes, flip and cook for 3 minutes, or until middle is almost opaque. Plate.
  2. Toss the strawberries, avocado, and lime juice together and serve with the salmon.
