Pancake Bites

Delicious, bite sized pancakes baked in a mini muffin tin with your favorite add-ins with blueberries, chocolate chips and more!

Ingredients

  • 2 cups all-purpose flour
  • 1 Tablespoons granulated sugar
  • 2 teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ cups buttermilk
  • 2 eggs
  • 4 Tablespoons butter melted
  • 1 teaspoon vanilla
  • Toppings: cereal chocolate chips, fruit, jelly, bacon, sprinkles

  1. Preheat the oven to 400 degrees Fahrenheit. Spray a mini muffin pan with non-stick spray. Set pan aside for later.
  2. In a large mixing bowl, combine the flour, sugar, baking powder and salt.
  3. In a small bowl beat the buttermilk, eggs, butter and vanilla together. Slowly add the flour mixture to the wet mixture gently stirring until just combined. Do not overmix.
  4. Spoon the batter into the prepared mini muffin pan, filling them to the top.
  5. Sprinkle desired toppings on each of the mini pancakes.
  6. Place the mini muffin pan in the preheated oven at 400 degrees Fahrenheit and bake for 10 minutes or until golden brown on the top.
  7. Remove and serve with warm maple syrup.

Notes

  • FRIDGE: Place leftovers from this pancake bites recipe into an airtight container and store in the fridge for up to 4 days. If any of your pancake bites have cereal as a topping, keep in mind that the longer they are stored, the more soggy the cereal will become.
  • FREEZER: Put of all of the leftover pancake bites on a baking sheet in a single layer and place in the freezer. Once frozen, transfer them to an airtight container or freezer bag. Store in the freezer for up to 2 months. Allow to thaw before eating.
  • To reheat, pop in the microwave or toaster oven until warm! Serve with more warm maple syrup.
