Panda Express Super Greens (Copycat Recipe)

The vegetables are steamed briefly to retain a firm, crisp texture, especially in the broccoli, while infusing them with a mildly spicy and savory taste. Ingredients
- 6 cups kale lightly packed, roughly chopped
- 4 cups broccoli florets
- 4 cups cabbage green, roughly chopped
- 2 tablespoons butter (avocado oil for paleo)
- 2 tablespoons soy sauce coconut aminos for paleo, gluten free
- 1-2 cloves garlic minced
- 1/2 teaspoon ground ginger
- 1/4-1/2 teaspoon crushed red pepper
- 6 tablespoons water
Instructions
- Place a large saute pan (with a lid) over medium-high heat. Add the butter, garlic, ground ginger, and crushed red pepper. Once the butter melts saute the garlic for 1 minute, then add in the soy sauce and water.
- Add the broccoli first, then the cabbage and the kale on top. Cover the saute pan and steam the vegetables for 3-4 minutes. The broccoli should still be firm, not soft in the middle.
- Toss the vegetables to coat in sauce. Serve warm.
Notes
- Substitute avocado oil for butter and coconut aminos for soy sauce to make this dish paleo and gluten-free.
- To maintain vegetable texture, avoid over-steaming; broccoli should remain firm in the center.
- Use certified gluten-free soy sauce to keep the recipe gluten-free, as the original Panda Express super greens contain gluten.
