Panda Express Super Greens (Copycat Recipe)
Description
The Panda Express Super Greens recipe blends chopped kale, broccoli florets, and roughly chopped green cabbage into a lightly sauced vegetable medley. The concoction begins by sautéing minced garlic in butter alongside ground ginger and crushed red pepper, releasing aromatic and spicy notes into the base. Soy sauce and water are added to create a steamy, flavorful environment in which the vegetables are layered and steamed under a lid, resulting in a balance of tenderness and crunch, particularly preserving the broccoli's firmness. This method allows the flavors to meld without overcooking the greens.
The final dish presents a mild heat from the crushed red pepper combined with the savory umami from soy sauce, balanced by the freshness of the vegetables. The quick steaming ensures that the vibrant greens retain both color and texture, making it suitable as a simple side dish to accompany various proteins or rice dishes.
For dietary adaptations, avocado oil can replace butter for paleo diets, and coconut aminos serve as a gluten-free soy sauce alternative. When using gluten-free soy sauce, this recipe maintains its gluten-free status, although it differs from the original Panda Express version, which contains gluten.
Ingredients
- 6 cups kale lightly packed, roughly chopped
- 4 cups broccoli florets
- 4 cups cabbage green, roughly chopped
- 2 tablespoons butter (avocado oil for paleo)
- 2 tablespoons soy sauce coconut aminos for paleo, gluten free
- 1-2 cloves garlic minced
- 1/2 teaspoon ground ginger
- 1/4-1/2 teaspoon crushed red pepper
- 6 tablespoons water
Instructions
- Place a large saute pan (with a lid) over medium-high heat. Add the butter, garlic, ground ginger, and crushed red pepper. Once the butter melts saute the garlic for 1 minute, then add in the soy sauce and water.
- Add the broccoli first, then the cabbage and the kale on top. Cover the saute pan and steam the vegetables for 3-4 minutes. The broccoli should still be firm, not soft in the middle.
- Toss the vegetables to coat in sauce. Serve warm.
Notes
- Substitute avocado oil for butter and coconut aminos for soy sauce to make this dish paleo and gluten-free.
- To maintain vegetable texture, avoid over-steaming; broccoli should remain firm in the center.
- Use certified gluten-free soy sauce to keep the recipe gluten-free, as the original Panda Express super greens contain gluten.
