Pandan Latte

Pandan Latte blends steamed milk with fragrant pandan syrup and a shot of espresso, resulting in a creamy, mildly sweet beverage with subtle herbal notes. The frothing technique creates a thick, velvety foam that carries the pandan flavor throughout the drink. Adding pandan paste enhances the green color but is optional. This latte suits those who appreciate aromatic, lightly sweetened coffee drinks with a distinctive tropical twist.

Ingredients

  • 1 Cup milk Substitute: coconut milk, coconut cream mixed with water in a 1:3 ratio or soy milk. I don't recommend using oat milk, whole
  • 1- 1½ Tablespoons pandan syrup For directions on making your own natural pandan syrup, click through this link. Pandan syrup already contains sugar so I don't feel the Pandan Latte needs anymore sweetener but feel free to add to taste. For how to sweeten without adding sugar, click here.
  • 1 hot espresso Substitute: ½ Tablespoon of instant coffee powder mixed with ½ Cup of hot water
  • ¼-½ teaspoon pandan paste Optional- this is necessary if you want the vibrant green color. Pandan syrup on its own is too light of a green to change the color of the milk noticeably.

Instructions

  1. Gently heat the milk over a low fire till steaming. This helps the milk to froth more easily.
  2. Once the milk is almost steaming, switch off the fire then add the pandan syrup and, if using, pandan paste.
  3. Whisk vigorously till a stable, thick foam appears.
  4. Transfer the pandan latte to a heat-proof mug. Pour in your coffee or espresso.
  5. Serve and enjoy with some pandan kueh on the side!

Notes

  • Pandan syrup provides both sweetness and aroma, so additional sweetener is optional and should be adjusted to taste.
  • Pandan paste gives a stronger green color but can be omitted if color is not a priority.
  • Milk can be substituted with coconut milk or soy milk; avoid oat milk or whole milk for best texture.
  • For pandan cold-brew coffee, soaking pandan pulp with coffee grounds overnight infuses flavor.
  • Serving pandan kueh alongside complements the flavor and adds a traditional touch.
