Pandan Latte
Description
The Pandan Latte combines milk gently heated until steaming with pandan syrup and optional pandan paste, whisked to form a rich foam. The addition of hot espresso creates a layered drink with creamy texture and a mildly sweet, herbal flavor from the pandan. The preparation method emphasizes gentle heating to facilitate frothing without boiling the milk, preserving its smoothness. The resulting foam is stable and thick, enhancing mouthfeel and presentation.
The pandan syrup provides sweetness along with its vegetal fragrance while the espresso adds bold coffee notes, balancing the drink. Including pandan paste yields a more vivid green color but is not essential for flavor. This latte pairs well with light snacks such as pandan kueh, emphasizing traditional flavor harmony.
Pandan syrup already contains sugar, so additional sweeteners are optional depending on taste. The drink can be customized by substituting coconut or soy milk, though oat milk and whole milk are not recommended. Variations include pandan cold brew coffee or pandan coconut latte by adjusting components and preparation steps as described in the original notes.
Ingredients
- 1 Cup milk Substitute: coconut milk, coconut cream mixed with water in a 1:3 ratio or soy milk. I don't recommend using oat milk, whole
- 1- 1½ Tablespoons pandan syrup For directions on making your own natural pandan syrup, click through this link. Pandan syrup already contains sugar so I don't feel the Pandan Latte needs anymore sweetener but feel free to add to taste. For how to sweeten without adding sugar, click here.
- 1 hot espresso Substitute: ½ Tablespoon of instant coffee powder mixed with ½ Cup of hot water
- ¼-½ teaspoon pandan paste Optional- this is necessary if you want the vibrant green color. Pandan syrup on its own is too light of a green to change the color of the milk noticeably.
Instructions
- Gently heat the milk over a low fire till steaming. This helps the milk to froth more easily.
- Once the milk is almost steaming, switch off the fire then add the pandan syrup and, if using, pandan paste.
- Whisk vigorously till a stable, thick foam appears.
- Transfer the pandan latte to a heat-proof mug. Pour in your coffee or espresso.
- Serve and enjoy with some pandan kueh on the side!
Notes
- Pandan syrup provides both sweetness and aroma, so additional sweetener is optional and should be adjusted to taste.
- Pandan paste gives a stronger green color but can be omitted if color is not a priority.
- Milk can be substituted with coconut milk or soy milk; avoid oat milk or whole milk for best texture.
- For pandan cold-brew coffee, soaking pandan pulp with coffee grounds overnight infuses flavor.
- Serving pandan kueh alongside complements the flavor and adds a traditional touch.
