Ingredients

  • 750 grams flour High Protein 13-14%
  • 250 grams fine semolina flour
  • 300 grams Biga
  • 22 grams salt
  • 700 water

Instructions

    Cup of Yum
  1. Add all the ingredients into a mixing bowl with hook attachment.
  2. Mix 8 min. low, 5 min high
  3. Dough temperature 26◦C
  4. Bulk fermentation 2 hours
  5. Scale 650 grams each piece
  6. Slightly Round and place on floured boards
  7. Cover and proof for 60 minutes
  8. Preheat oven 220◦C .
  9. Bake for 28-30 minutes.
