Panera Fuji Apple Salad

Panera Fuji Apple Salad is delicious combination of green leaf lettuce, dried apples and a delicious homemade salad dressing recipe. Easy copycat recipe that the whole family loves.

Ingredients

Salad Ingredients:
  • 6 cups mixed salad greens spring mix
  • 2 medium Fuji apples thinly sliced
  • 1/2 cup red onion thinly sliced
  • 1/2 cup dried cranberries
  • 1/2 cup gorgonzola cheese crumbles
  • 1/2 cup toasted pecans
  • 1/2 cup apple chips
  • 4 ounces grilled chicken breast sliced
Apple Vinaigrette Dressing:
  • 1/4 cup apple cider vinegar
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon finely minced shallot
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a small bowl, whisk together the apple cider vinegar, olive oil, honey, Dijon mustard, minced shallot, salt, and black pepper until well combined. Set the dressing aside.
  2. In a large bowl, combine the mixed salad greens, and sliced red onion.
  3. Add the apple slices, dried cranberries, gorgonzola cheese crumbles, toasted pecans and apple chips to the bowl.
  4. Add the grilled chicken to the salad.
  5. Drizzle the desired amount of apple vinaigrette dressing over the salad and toss gently to coat all the ingredients.
  6. Serve the salad immediately.

Notes

  • You can use 2 medium Fuji apples, thinly sliced instead of the apple chips.
