Ingredients
Salad Ingredients:
- 6 cups mixed salad greens spring mix
- 2 medium Fuji apples thinly sliced
- 1/2 cup red onion thinly sliced
- 1/2 cup dried cranberries
- 1/2 cup gorgonzola cheese crumbles
- 1/2 cup toasted pecans
- 1/2 cup apple chips
- 4 ounces grilled chicken breast sliced
Apple Vinaigrette Dressing:
- 1/4 cup apple cider vinegar
- 1/4 cup olive oil
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1 teaspoon finely minced shallot
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a small bowl, whisk together the apple cider vinegar, olive oil, honey, Dijon mustard, minced shallot, salt, and black pepper until well combined. Set the dressing aside.
- In a large bowl, combine the mixed salad greens, and sliced red onion.
- Add the apple slices, dried cranberries, gorgonzola cheese crumbles, toasted pecans and apple chips to the bowl.
- Add the grilled chicken to the salad.
- Drizzle the desired amount of apple vinaigrette dressing over the salad and toss gently to coat all the ingredients.
- Serve the salad immediately.

- You can use 2 medium Fuji apples, thinly sliced instead of the apple chips.
