Panera Greek Salad

Ingredients

Greek Dressing
  • ⅓ cup apple cider vinegar
  • ½ cup extra virgin olive oil
  • ½ teaspoon Dijon mustard
  • 2½ teaspoons fresh lemon juice
  • ½ teaspoon dried oregano
  • ¼ teaspoon dried thyme
  • ¼ teaspoon dried basil
  • ¼ teaspoon minced garlic  or garlic granules
  • ¼ teaspoon ground black pepper
  • ½ teaspoon salt
Salad
  • 4 to 5 cups sliced romaine lettuce
  • 2 tablespoons grape tomatoes halved lengthwise
  • 1½ tablespoons crumbled Feta cheese
  • 1 tablespoon grated Parmesan cheese
  • 3 to 4 thin slices red onion cut into rings
  • 8 black kalamata olives
  • 3 Pepperoncini
  • salt and black pepper to taste

Instructions

Dressing
    Cup of Yum
  1. Combine all of the dressing ingredients in a small bowl and whisk together well.
  2. If you do not use all of it right away, store the remainder in a sealed container in the fridge.
Salad
  1. Place the lettuce in a bowl.
  2. Top with the rest of the salad ingredients.

Notes

  • You can make the salad dressing up to 5 days in advance. Keep it in an airtight container in the fridge. Take it out about an hour before and shake or whisk to re-combine.
