Ingredients
Greek Dressing
- ⅓ cup apple cider vinegar
- ½ cup extra virgin olive oil
- ½ teaspoon Dijon mustard
- 2½ teaspoons lemon juice fresh
- ½ teaspoon oregano dried
- ¼ teaspoon thyme dried
- ¼ teaspoon basil dried
- ¼ teaspoon garlic or garlic granules, minced
- ¼ teaspoon black pepper ground
- ½ teaspoon salt
Salad
- 4 to 5 cups romaine lettuce sliced
- 2 tablespoons grape tomatoes halved lengthwise
- 1½ tablespoons feta cheese crumbled
- 1 tablespoon Parmesan Cheese grated
- 3 to 4 thin slices red onion cut into rings
- 8 kalamata olive black
- 3 Pepperoncini
- salt to taste
- black pepper to taste
Instructions
Dressing
- Combine all of the dressing ingredients in a small bowl and whisk together well.
- If you do not use all of it right away, store the remainder in a sealed container in the fridge.
Salad
- Place the lettuce in a bowl.
- Top with the rest of the salad ingredients.
Notes
- The dressing can be made up to five days ahead and stored refrigerated in an airtight container.
- Shake or whisk the dressing before use to remix separated ingredients.
