Description
Panera Greek Salad pairs fresh, crisp romaine lettuce with flavorful toppings including halved grape tomatoes, crumbled feta, and grated Parmesan cheeses. Thin rings of red onion add sharpness while kalamata olives contribute a salty, briny contrast. Pepperoncini add a mild heat and tang.

- ⅓ cup apple cider vinegar

- ¼ teaspoon basil dried
- ¼ teaspoon garlic or garlic granules, minced
- ¼ teaspoon black pepper ground
- ½ teaspoon salt
Salad
- 4 to 5 cups romaine lettuce sliced
- 2 tablespoons grape tomatoes halved lengthwise
- 1½ tablespoons feta cheese crumbled
- 1 tablespoon Parmesan Cheese grated
- 3 to 4 thin slices red onion cut into rings
- 8 kalamata olive black
- 3 Pepperoncini
- salt to taste
- black pepper to taste
Instructions
Dressing
- Combine all of the dressing ingredients in a small bowl and whisk together well.
- If you do not use all of it right away, store the remainder in a sealed container in the fridge.
Salad
- Place the lettuce in a bowl.
- Top with the rest of the salad ingredients.
Notes
- The dressing can be made up to five days ahead and stored refrigerated in an airtight container.
- Shake or whisk the dressing before use to remix separated ingredients.
