Ingredients

  • 2 tablespoons butter
  • 1 cup orzo
  • 2 cups chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped basil
  • salt and pepper to taste

Instructions

    Cup of Yum
  1. In a medium saucepan, melt the butter over medium heat. Stir in the orzo and cook, stirring often, until lightly toasted.
  2. Add the chicken broth to the pan and cover.
  3. Cook for 15 minutes or until the liquid has absorbed.
  4. Stir in the Parmesan, basil, and salt and pepper.
  5. Continue stirring until the Parmesan has melted.
  6. Serve hot.

Notes

  • You may swap out the basil for any herb you preferred. 1/2 teaspoon of dried Italian seasoning will work well in place of fresh herbs, too.
