Parmesan roasted sweet potatoes are so delish! Sweet potatoes are tossed in oil, garlic, & parmesan, then oven-roasted until crispy on the outside & fluffy on the inside!

Ingredients
- 1 ½ pounds sweet potatoes about 2 medium
- 2 cloves garlic minced
- 2 tablespoons olive oil
- ¼ cup shredded Parmesan cheese
- 2 sprigs fresh thyme or ¼ teaspoon dried thyme leaves
- salt and pepper to taste
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- Peel the sweet potatoes and cut into ½" cubes.
- Toss the potatoes with remaining ingredients and spread onto the parchment paper.
- Bake 25-30 minutes stirring after 15 minutes. Broil 1 minute if desired.

Notes
- If desired you can skip peeling the sweet potatoes and cube them with the skin.
- Sweet potatoes can be cut into wedges or thick coins if you'd prefer, cook time may vary slightly.
- Toss with the oil and seasonings right on the pan to avoid washing a bowl. Other vegetables or onions can be added to the pan.
- Leftover sweet potatoes are delicious served chilled in salads.
