Parmesan Roasted Sweet Potatoes

Parmesan roasted sweet potatoes are so delish! Sweet potatoes are tossed in oil, garlic, & parmesan, then oven-roasted until crispy on the outside & fluffy on the inside!

Ingredients

  • 1 ½ pounds sweet potatoes about 2 medium
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • ¼ cup shredded Parmesan cheese
  • 2 sprigs fresh thyme or ¼ teaspoon dried thyme leaves
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Peel the sweet potatoes and cut into ½" cubes.
  3. Toss the potatoes with remaining ingredients and spread onto the parchment paper.
  4. Bake 25-30 minutes stirring after 15 minutes. Broil 1 minute if desired.

Notes

  • If desired you can skip peeling the sweet potatoes and cube them with the skin.
  • Sweet potatoes can be cut into wedges or thick coins if you'd prefer, cook time may vary slightly.
  • Toss with the oil and seasonings right on the pan to avoid washing a bowl. Other vegetables or onions can be added to the pan.
  • Leftover sweet potatoes are delicious served chilled in salads.
