Parmesan Roasted Zucchini

This Parmesan Roasted Zucchini Recipe is easy to make and tastes great. Oven roasted zucchini with parmesan is the best side dish!

Ingredients

  • 3 medium zucchinis
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit. 
  2. Slice the zucchinis into 1/2 inch thick slices.  
  3. Add the sliced zucchinis to a large bowl.  
  4. Drizzle the olive oil on top of the zucchini and sprinkle the salt, pepper, garlic powder and paprika on top of the zucchini.  
  5. Toss the sliced zucchinis to coat them with the olive oil and the seasoning mixture.  
  6. Place the zucchini in a single layer on a baking sheet (lined with foil).  
  7. Sprinkle the grated parmesan cheese on top.  
  8. Bake for 10-12 minutes until the zucchini is browned slightly.
  9. Remove the pan from the oven, serve while warm and enjoy! 

Notes

  • Refrigerate the leftovers in an airtight container for up to 3 days.
