Ingredients
- 2 diced grilled chicken breasts
- 6-8 bacon strips
- 4 ounces dry pasta
- 6 cups chopped mixed lettuce
- 3 quartered boiled eggs
- 1 cup halved cherry tomatoes
- 2 seeded and diced cucumbers
- 2 ounces bleu cheese
Red Wine Vinaigrette
- ¼ cup red wine vinegar
- ½ cup olive oil
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- ¾ teaspoon salt
- ½ teaspoon pepper
Instructions
- Cook the 4 ounces dry pasta according to package directions until al dente. Drain, rinse with cold water to keep the pasta from sticking together, and set aside.
- Cook the 6-8 bacon strips for 8-12 minutes until crispy and remove from the pan. Drain on a paper towel and dice into small pieces once cool. Set aside.
- Assemble the salad, add 6 cups chopped mixed lettuce to a large bowl, and top with the 2 diced grilled chicken breasts, cooked pasta, cooked and diced bacon, 3 quartered boiled eggs, 1 cup halved cherry tomatoes, 2 seeded and diced cucumbers , and 2 ounces bleu cheese.
- Make the vinaigrette. In a bowl, whisk together the ¼ cup red wine vinegar , ½ cup olive oil, 1 tablespoon honey, 1 tablespoon Dijon mustard, ¾ teaspoon salt, and ½ teaspoon pepper.
- Pour the vinaigrette over the salad and toss to combine and coat everything in the dressing.
