Ingredients

  • 8 ounces pasta such as penne, macaroni, or shells, dried, medium-sized, 227 grams
  • 2 ounces unsalted butter 57 grams
  • 4 ounces Telemea cheese grated, or a feta soaked in brine, 113 grams
  • granulated sugar for serving, optional

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the pasta and cook, stirring occasionally, until just tender, al dente.
  3. Drain the pasta and set aside.
  4. In a large cast iron skillet or nonstick pan, melt the butter over medium-low heat.
  5. Add the drained pasta and toss in the cheese until well combined.
  6. Cook the pasta for 2 minutes, stirring occasionally, to get some crispy edges on the pasta.
  7. Remove from heat and allow to rest for another 2 minutes.
  8. Serve warm with a little sugar sprinkled over the top if desired.
